The size of the blade measures 200 x 37mm or 7 7 8 x 1 7 16, and is perfect for a line knife or a general purpose large petty small chefs knife. Im unsure of the date, my guess would be 70s, but Sabatier Jeune started making stainless in the 50s so its hard to know. Cosmetically the condition is pretty great for a vintage knife of this type,
